The Classic Filipino Favorite Chicken and Pork Adobo

Ingredients
  

  • 1 thick slab of pork belly (cut into 2 inch)
  • 4 random cuts of chicken meat (thigh, breast(
  • 4 cloves of crushed garlic
  • 1 tablespoon of black peppercorns
  • 4 bay leaves
  • 3 pieces of star anise
  • ½ cup of dark soy sauce
  • ¼ cup of cane vinegar
  • ¼ cup of white sugar
  • ½ cup of water

Instructions
 

  • Cut the pork belly into a 2 inch cubes.
  • Using a thick bottom pot, add all the ingredients, except the water, and cook under medium heat.
  • Let all the ingredients simmer for 15 minutes, and then add the water.
  • Lower the heat to low, and let your adobo simmer for 30 minutes or until the pork meat is tender.
  • Then continue to cook on low heat without the lid and reduces the juices to ¼ of the original quantity.
  • Serve and enjoy your chicken and pork adobo with a steaming bowl of jasmine rice.
